Why is it that the tastiest foods always seem to be the worst for you?
The good news is that it’s easy to find healthier substitutions for all your favourite comfort foods – here are three tasty transformations.
Baked-not-fried fish and chips
You don’t need a deep fryer to make this beachside favourite taste delicious. Bake it instead of frying and you’ll immediately reduce calorie intake while still getting that coveted crunchy texture.
To make the chips, spray a baking tray with olive oil spray to lightly grease. Arrange cut potatoes on top then lightly spray with oil. Bake in a preheated 200°C oven for about 40 minutes, or until golden.
To make the fish, coat firm white fillets in flour, shaking off any excess. Dip in lightly-whisked egg then coat in breadcrumbs. Spray with light olive oil spray and bake for 20 minutes, or until golden.
Top tip: If you can’t resist tartare sauce, make a healthier version by combining low-fat natural yoghurt with chives, capers and lemon rind.
Every family seems to have their own secret recipe for carbonara sauce, experimenting with different combinations of eggs, butter, oil, streaky bacon, cheese and cream – all of which are high in fat!
If you want to cut down on calories, make the sauce using lean leg ham instead of bacon and just add light evaporated milk and eggs, without the added extras. Use about 100mL of evaporated milk for each egg – three eggs will be enough for 500g pasta or four standard servings. Add this mixture to al dente pasta and stir over medium heat until almost set. Season with pepper and garnish with parsley to serve.
Berries and cream swirled together with sugary, sticky meringue – it’s no wonder Eton mess is a dinner party favourite.
To make a not-so-guilty version, substitute the cream with a mixture of two part low-fat Greek yoghurt to one part low-fat cream cheese. It’s still decadently thick, but much lower in fat. Layer the cream mix with crushed store-bought meringues and strawberries in a glass and you’re ready to serve. Easy!
