There’s no easier way to get the kids to enjoy fresh fruit and dairy than with a speedy smoothie. This one is deliciously thick and satisfying.
To make four glasses, put 2 peeled bananas, 1 chopped mango, 1 cup milk and ¼ cup natural yoghurt in a blender and whizz until smooth. Add a spoonful of honey for extra sweetness, if you like.
Top tip: Use ice cream instead of yoghurt to make a special summer treat.
Easy mango salsa
This versatile salsa is heaven on prawns and salmon but also pairs well with chicken, ham and Cajun lamb or beef, so there’s a combination to suit everyone. Most kids will love the mix of avocado and mango – if you’re cooking for adults, add some chilli flakes to give it some extra kick.
To make 3 cups, combine 1 diced avocado with 1 diced mango and half a thinly diced red onion. Add 1/3 bunch chopped coriander, 2 tablespoons fresh lime juice and 1 tablespoon olive oil. Season with salt to taste.
Top tip: When selecting mangoes, give the fruit a gentle squeeze – a ripe mango will give slightly. You should be able to smell that delicious fruity aroma at the stem end, even through the skin. Different varieties are better at different times of year – check availability here.
Grilled mango with ice cream
This dessert is the perfect way to finish off a barbecue – just be sure to clean the hotplate before you begin.
Cut the cheeks off a mango, then score the flesh in a diamond pattern. Sprinkle with a teaspoon of brown sugar then grill, cut-side down, for about five minute or until lightly browned. Serve with ice cream, thick yoghurt or your favourite sorbet.
