Cooler days call for a slow and hearty stew to warm the cockles and rekindle the inner fires. It takes a bit of preparation, but then everything goes into one pot and it’s left to stew away and develop all its gorgeous flavours. This gives you time to step away and relax, and the single pot saves on washing up too. This classic stew calls on Mediterranean flavours and herbs, and tomatoes give it a necessary sweetness. Serve with lots of crusty bread for mopping up the juices.
1 kg beef chuck, cut into 4cm pieces
3 tbsp olive oil
200g piece pancetta, cut into 1cm pieces
1 onion, chopped
3 cloves garlic, chopped
3 medium carrots, cut into 3cm pieces
3 golden eschalots, halved lengthways
250mL red wine
1L beef stock
1 x 400g can chopped tomatoes
1 small sprig rosemary, stalk discarded
5 medium kipfler potatoes, peeled and halved on the diagonal
¼ bunch flat-leaf parsley, roughly chopped
Sourdough bread, to serve
Extra virgin olive oil, for drizzling
- Season beef with sea salt and freshly ground black pepper, covering all sides. Heat a wide, heavy-based saucepan with a lid over high heat. Add the oil and, working in three batches, sear the meat on all sides until well browned. This gives the beef more flavour. Transfer beef to a plate and set aside.
- Add pancetta to the same pan, cook on medium heat until just golden, about 2 minutes, then add chopped onion. Cook gently for 5 minutes until tender. Add garlic, carrot and eschalots and cook another 2-3 minutes.
- Return beef to the pan then pour in red wine. Simmer for 5 minutes to let wine reduce then stir in beef stock, tomatoes and rosemary. Cover with lid and let simmer on low heat for 1 hour. Add potatoes and cook another 30-40 minutes, until potatoes are just done.
- To serve, spoon stew into individual bowls, scatter over parsley and offer sourdough bread for dipping and extra virgin olive oil for drizzling.
Top tip: Pots and pans clean perfectly well in the dishwasher, so long as you load them properly. Fold down the bottom plate racks and place pan face down to allow the water to reach all corners. Using Finish Quantum in the wash will help you get an amazing clean first time, every time.
