Inviting people over for a Christmas catch up but don’t have any time to cook? These nibbles can be prepared in a matter of minutes but still retain that festive wow factor.
Tomato and bocconcini bites
Thread half a cherry tomato on a toothpick. Add a piece of basil, a small bocconcini ball and the other half of the tomato. Make as many as required, then arrange on a platter. Sprinkle with salt and pepper and drizzle with caramelised balsamic vinegar to serve.
Easy beetroot dip
To make 8 serves, place a 425g can of drained beetroot slices into a food processor. Add 1 tsp ground cumin, 1/3 cup of plain Greek-style yoghurt and a generous squeeze of lemon juice. Process until smooth, then serve with Lavosh biscuits or pita breads.
Oysters with red wine vinegar dressing
To make enough dressing for a dozen oysters, combine 2 tsp finely chopped red onion with 1 tbsp red wine vinegar and 1 tsp olive oil. Spoon dressing over oysters and serve.
Remove the rind and seeds from a ripe rockmelon then slice into wedges. Wrap each wedge with a thin slice of prosciutto. Serve cold.
That’s right, it’s possible to make a delicious gourmet starter with as little as two ingredients and just a few minutes to spare. After all, the holidays are meant to be relaxing as well as entertaining.
