Self-saucing Sticky Date Pudding Recipe

Of course, only once this self-saucing sticky date pudding recipe has been made and is cooking in the oven.

This recipe is so simple, it’s almost tempting to call it lazy. The sauce makes itself as the sticky date pudding cooks away in the oven, and it’s gooey, caramel and totally delicious. As you dig down into the pudding to scoop up a serve, or two, the sauce magically appears and makes itself known.

If you have fussy kids, who think they don’t like dried fruits, just blitz the dates a little more when making the batter. They’ll never know they’re in there. Promise.

Self-saucing Sticky Date Pudding Recipe

INGREDIENTS

200g dried pitted dates, roughly chopped
1 cup boiling water
1 teaspoon bicarbonate soda
80g butter, at room temperature
¾ cups brown sugar
2 eggs
1 teaspoon cinnamon powder
1 ¾ cups self-raising flour

Sauce

¾ cups brown sugar
1 tablespoon butter

METHOD

1. Preheat oven to 180ºC, and grease a medium baking dish (20cm by 15cm).

2. Place the chopped dates and the bicarbonate soda into a heat-proof bowl, and pour the boiling water over the top. Stir, and leave for 30 minutes.

3. Place the butter and sugar into a bowl, and cream using an electric mixer. Add the eggs, and mix until combined. Add in the date mixture, and mix until combined. The dates will breakdown a little. Fold through the self-raising flour and cinnamon.

4. Pour into the prepared baking dish.

5. To make the sauce, sprinkle the brown sugar over the top of the pudding. Mix the butter and water together, and gently pour over the brown sugar. Do not mix in.

6. Place into the oven and cook for 20-25 minutes.

7. Serve with ice cream or cream, or both.
