Omelettes are the go-to food when you don’t feel like doing the groceries or have time to cook – they’re quick, hearty, super easy and made from just a few ingredients. That said, they don’t always get the credit they deserve. Sure they’re simple, but when cooked perfectly they can also be a real treat.
Follow these steps to ensure you get a perfectly fluffy omelette every time.
- Select your equipment
A non-stick pan is key and it’s also important to consider the size – too big and the omelette will cook too quickly; too small and it will be crispy on the outside but raw in the middle. Because the cooking time is so quick, you should have everything you need including your spatula, plate and ingredients within arm’s reach so you’re ready to go.
- Get cracking
To make an omelette for one, place 2 eggs, 1 tbs water and a pinch of salt and pepper in a bowl. Beat well with a fork, until there are no more flecks of white.
Top tip: When the water boils it begins to evaporate, which helps give the omelette that fluffy texture.
- Butter up
Add a small knob of butter to the pan on medium heat. The butter should melt and foam, but not brown. When the butter is melted and bubbling, add your eggs and tilt the pan to spread the mixture out evenly. As it begins to set, use your spatula to gently lift and stir, tilting the pan so the uncooked egg runs underneath.
- Terrific toppings
When the egg mixture begins to firm but is still raw on top, it’s time to add your toppings. A small handful of cheddar cheese is simple and delicious. Ham and tomato is another winning combo. Whatever you use, be sure to scatter the ingredients quickly so the omelette doesn’t overcook. 1-2 minutes is generally enough time to get a nice golden colour without a crispy finish.
- Serve and enjoy
Go around the edge of the omelette with a spatula, then fold in half. Carefully slide onto a plate and serve with hot buttery toast.
