Easy summer cocktails

You don’t need a bartender to create cocktail hour! These DIY drinks can be mixed in a flash and showcase the best flavours of summer. Escape the heat and enjoy – it’s going to be a hot one.

Perfect Pimm’s

Serves 4

Place 1 thinly-sliced lemon and ½ a thinly-sliced orange in a large jug. Add ½ a thinly-sliced Lebanese cucumber, 4 hulled strawberries and a few sprigs of fresh mint. Pour in 125mL Pimm’s No. 1 and 500mL lemonade. Stir to combine and serve on ice.

Alcohol-free strawberry daiquiri

Serves 4

In a blender, combine a 250g punnet hulled strawberries, ½ cup white sugar, 3 cups cold lemonade and a generous squeeze of lime juice. Add 1½ cups of ice, then blend until smooth. Pour into chilled margarita glasses and garnish with a fresh strawberry.

Peach sangria

Serves 6-8

Place 2 sliced peaches in a large jug. In a small saucepan, bring ¼ cup sugar and ½ cup of water to boil and stir until sugar dissolves. Remove from heat and allow to cool. Pour the sugar syrup, 190mL peach schnapps and a bottle of dry white wine into the jug. Stir and place in the fridge to cool. When ready to serve, top the jug with chilled ginger ale and stir to combine.
